Welcome to Taste of the Caribbean, where every bottle tells a story of love, heritage, and the vibrant flavors of the islands. My journey began on the beautiful island of Trinidad in the West Indies, where pepper sauce is a beloved staple in every household. Fast forward, I'm a stay-at-home mom living in Manila, Philippines, and I yearned for the comforting taste of home—specifically, that beloved pepper sauce. This longing ignited my passion for creating hot sauce, transforming a personal craving into a culinary adventure.
I often received questions about life in the Caribbean, but one more than others, "what's the food like?" This made me curious about sharing the essence of Caribbean cuisine with friends. I organized an event called “Introduction to Caribbean Cuisine in the Philippines.” To my delight, it was a resounding success! The local community, initially unfamiliar with hot sauce (spicy food isn't prominent in Filipino culture), embraced my creations, and soon, my sauces became the perfect complement to their meals. The demand grew, leading me to bottle and label my sauces, and before I knew it, I was fulfilling orders for dozens of bottles—even from local restaurants—straight from my kitchen!
In my quest for authentic flavors, I connected with farmers who grew the unique varieties of peppers I cherished from my childhood. Often, these peppers went to waste as people were unaware of their culinary potential. I started sourcing these vibrant ingredients and crafting them in my kitchen, sharing my creations with friends on social media. The response was overwhelming, and soon I was participating in pop-up markets and even a Chilli Sauce Festival.
From my first batch of Birds Eye sauce to the fiery Carolina Reaper and Scotch Bonnet, each creation has been embraced by thrill-seeking food lovers. Local Filipinos, millennials and expatriates alike were excited to finally access the diverse pepper varieties they had only heard about. Even during seasonal shortages, my loyal customers were willing to wait for their favorite flavors and try my other sauces because they so enjoy the heat balanced with rich, authentic taste.
Now residing in Sydney, Australia, I am excited to share my flavorful creations with a new audience. I hope Sydney is ready for the bold and vibrant tastes of the Caribbean!
